printer files

we recently inslalled a newer version of linux on one of our PCs, but its uses CUPS for the printers instaed of the norm.

In our previous versions of Linux we were able to create printer files.
SOme people called these virtual printer in either case the requested  data is printed to a a file as a ASCII flat file. If anybody has a suggestion on how to create this type of printer, any suggestion would be appreciated.
