cups-- default printer?

I have a single print server, with others around the dept, which are
reported on all of the other computers I admin. I want my print server
to be the default on all of the computers I admin.
How do I set mine as the default on all of the machines. Even with the
name of my printer in /etc/cups/lpoptions as the default, when I bring
up localhost:631 Printers I get the message
Default Destination: none.
Also the printer selected as the default if I use lpr is the first
(random ) one in /etc/printcap.
There is no option anywhere on that web setup to choose the default
printer. There is also nothing anywhere to delete a printer that I can
find.
[As an aside, the web interface is really terrible. For example,
If I edit or modify a printer, I get no indication of what the current
settings are-- instead I have to enter everything by hand again. This is
just silly and horribly confusing. Serious work needs to be done on the
web interface.]
