pstops (CUPS 1.1.20) does not work with ESP-Documents (ununsable output)

It *does* generate other problems, so please instead fix your app.
EPS files can only contain a single page.  If you have a multi-page
PS file, is it NOT EPS and MUST NOT be flagged as such to conform
to the Adobe specifications.

Garbage in == garbage out.  Don't ask us to work around bugs in
other software.
