So long as you are using printer sharing (browsing on), you can't
delete/omit a single shared printer from a client.  Even if you do
"lpadmin -x printername" on the client, the printer will reappear
as soon as the server announces the printer again.

If that is the only printer from the server, you can use BrowseDeny
on the client (in /etc/cups/cupsd.conf) to prevent the client from
adding the remote printer for you.
