[cups.development] How to show printer resident fonts in write?

AFAIK CUPS does not use non-postscript printer's resident fonts - that's certainly the case for HP PCL/PXL or compatible printers. Many [all?] of those printers have PCL resident fonts. AFAIK CUPS ignore non-postscript printer's resident fonts, and just does full-page graphics in most cases.

Somebody more knowledgeable on CUPS' non-postscript functionality, please correct me if I am wrong.

Also, AFAIK, current CUPS (or current Linux/ghostscript based printing) already can print to many Epson(?) 24-pin dot matrix printers. Have your checked the CUPS DDK yet, how CUPS interact with Epson dot matrix printers?
