What I realized when again looking into the PPD of your printer is:

As you can see in the first snippet, the BindingEdge is not reflected in
PostScript code; it seems that the pstocaps3 filter interpretes the  
comments
to set the printer's behaviour.

Try to change the default BindEdge location from "Left" to  
"Top" (using the lpadmin
command or CUPS' web interface) and try again printing a booklet.
