(1) Wait for CUPS 1.2.x - it will provide "global" default options.
(2) with CUPS 1.1.x, use the lpoptions mechanism (but it may be tedious;
    you must specify this option for every printer).
(3) Use samba >= 3.0.3 and print through samba. It povides a "cups
options"
    directive in smb.conf.
