Default printer options

So where can I find the options for changing the font on the printer?
Our printer is stuck on that aweful courier font when printing text files from the command line.  We would like to be able to use the printer's own inbuilt fonts to print some jobs but I can't find out how to do this.  Neither kprinter nor lpoptions has any mention of fonts.  We use various printers, typically HP Laserjet 4 and the likes.
Can anyone help? thanks.
