I have also seen the same problem.  My configuration:

OS:             Fedora Core 3 - all updates as of 4/14/05
CUPS Version:   cups-1.1.22-0.rc1.8.5
Printer:        HP Laserjet 5100
Queue type:     Networked JetDirect
Printer Model:  (I select Generic->HP->LaserJet 5100)
Driver options: Double-Sided Printing: Long-edge (Standard)
                (everything else under Driver Options left alone)

Then, I print using "lp -d <printername>", and the result is single-sided.

Worth noting: my laptop accesses the same printer and has no problem.  It's configuration is:

OS:             Fedora core 2
CUPS Version:   cups-1.1.20-11.11
Printer:        ((All printer info is identical to that cited above))

My understanding is that "switching to the hpijs driver" is not a viable option in my case because (1) I don't see that listed in the menu I finally get to choose from and (2) I cannot select anything other than "Networked JetDirect" at the higher level because, well, that's what it is.
