CUPS stores the print jobs history in the page_log file, however
depending on the printer drivers you use this file can be completely
inaccurate.

Anyway, on cups.org you'll find links to PrintAnalyze and phpPrintAnalyzer
which are different software which serve the same purpose : extract
datas from page_log and output statistics.

As an alternative you could use a dedicated print quota software
(in accounting-only mode if you don't need quotas) which usually
gives much better accuracy than CUPS' page_log. Try PyKota, which
is available from :

You can use PyKota tools to extract datas from its database, or you    
can do this directly from OpenOffice (for example), or you can use
PyKota's data dumper to extract the printing history and output it
in the CUPS' page_log format, in the case you want to use the
two tools mentionned above.
