Copy your stc2.upp file to stc2-grey.upp and open the copy in a text 
editor. Change the line "-dupColorModel=/DeviceCMYK" to 
"-dupColorModel=/DeviceGray" and save. Set up a new printer using the 
stc2-grey.upp description and print a page. It should come out in 
greyscale.

NB: I haven't tried this myself, but it looks like it should work.
