Right. Forgot about that one. :)
So:
lpoptions as user: User settings. (Saved in ~/.lpoptions)
lpoptions as root: Host defaults. (Saved in /etc/cups/lpoptions)
lpadmin -h <server> as root: Printer defaults. (Saved in PPD)
