Are the Mac machines all printing through a common print server, or are
they all printing directly to the printer?  If it is the former, then
you have a variety of option from full blown print accounting (Pykota or
PapercutNG, etc.) to some sort of parsing of the CUPS logs directly.  If
the later is the case, you're pretty much out of luck as far as I know,
and you'll have to find some way of collecting the log of all the machines.
