Manually changing font size pitch etc..

Hello,

I am looking for information on how to modify the font,pitch,size, etc.. for specific printers. In my case I am using the postscript generic print driver supplied by the http://localhost:631/printers web application. I know I can change this with a lp -o option,  but would like to know how to change it to a default font/pitch size permanently.
