Dina,

I found the lire log analyzer a while back (http://www.logreport.org/).
 It parses and transforms many kinds of standard log files, including
cups page_log files.  It doesn't do live tracking, but you could cron it
to run as frequently as you wanted.  It does some amazing statistical
analysis for you, and will dump output to most any (useful) format you
could think of.

Please note, I have nothing to do with this project, I just really liked
it when I tried it out a couple of months back.
