Not really enough info provided. So here are some generic ideas:

# Check log files for anything that might account for the increased
load on the server.

# If possible whilst the system is under increased load try to
determine if the load is io (disk/network). Try googling for vmstat.

# Check if there are any cron jobs running at the time the load
spikes, and check if they might be contributing to the increased load.
