[cups.general] CUPS on Mac and queues overlapping?

Well, unless you have a typo above it looks like you are using  
completely different drivers (not just the B&W mods) on your two  
queues. That will definitely cause differences (which may be large  
depending on how different a Xerox 4500DX is from a 8560DN...)
