Printer settings using CUPS 1.3.7 (RHEL 5)

I just installed RHEL 5 and I'm trying to use CUPS for the first time.  I have setup a printer, but I need to change the default orientation (to landscape), Font Pitch (to 14) and Form Length (to 45).  Is there a command or config file I can edit to change those values on the Linux server?

I want those to be the default values used every time a job is sent to the printer I just setup.
