Emma,

Not a whole lot you can do after the fact, however the /var/log/cups/page_log file may provide sufficient information for you to audit the printing that has been over a longer time period.

For the future you can increase the default job history limit from 500 to whatever you want.  The easiest way to do this is from a Terminal window, for example to set the limit to 5000 jobs use:

    cupsctl MaxJobs=5000
