HP Printer Won't Accept CUPS Default Settings

CUPS Version : 1.5.0
Printer: HP PhotoSmart 6510
Computer: Early 2011 Macbook Pro2.2 GHz

I'm attempting to change the printer defaults for my HP printer via CUPS. I can successfully save the defaults (fast draft quality and grey-scale printing) in CUPS, but when I go to print something via Safari, MS Word, etc., the defaults do not show up in the printing interface. I thought maybe my CUPS wasn't working right, so I tried changing settings for another printer (Canon MX300, 5 years old) and that worked just fine in changing the defaults in the printing interface.

I've contacted HP support, who told me it's CUPS' fault and transferred me to Apple, who then told me they don't support CUPS but that it sounds like HP's fault. Called HP back, they gave me the same answer before and were quite rude to me. So, here I am... last ditch effort before I return the printer for a Canon.

Help me!!!
