Steffen,
The job control files ("cNNNNN") in the spool directory contains the job data for all jobs that have recently been submitted; by default, the last 500 jobs unless you have changed the retention policy (MaxJobs, MaxJobsPerUser, MaxJobsPerPrinter, PreserveJobHistory).
So backing up the spool directory will back up both the not-yet-printed jobs as well as the job history.

I have found that I need to copy the spool files (/var/spool/cups) and the job.cache (/var/cache/cups). But it seems to me, that this only works for not yet printed jobs. I also need the jobs which are completed. So how can I migrate the already completed print jobs?
