What ppd are you using?  On Linux, if your printer is called 'ThirtySix',
look at /etc/cups/ppd/ThirtySix.ppd

In that ppd, what's under 'PaperDimension'?  Do you see something like
'*PageSize P36x108/36"'?  Depending on your needs, try and define a
'*PageSize P36x999999/36"'?...  I assume the roll is actually finite; just
very, very large.
