Sorry, I see what you mean now.

Is there any way I can print a job from (eg) evince and somehow grep
the print stream sent to CUPS?

A little redundant now, as it's printed, but for reference. It would
be nice to find the bug and submit it.

Right. I do occasionally use gv to look at PS.

Yes, I never had any problem with PS; and it has the advantage that it
can easily be edited (for some value of "easily" :-)

This is a great advantage for most types of print job. But I agree PS
offers better levels of control.
