The drivers that are bundled with CUPS itself are listed in the README.md file.  As for extra information, there is nothing in the CUPS documentation beyond that - the sample drivers provide basic printing functionality for a variety of printers using common PDLs.  The "application/vnd.cups-raw" MIME media type is how you specify print data in the printer's native PDL, but we do not provide any guidance on producing printer-ready print data since that has never been the goal of CUPS - rather, end-users and applications should never have to deal with the printer's native PDLs but instead can use higher-level formats.
