How do I manage quotas?

Sorry - I can't find these answers anywhere.

I am a school sysadmin, and I need to give staff and students different quotas.  Can I do this by using two alias names for the same printer?

More worryingly, if a pupil has a good reason for a quota extension, I need to be able to either reset his quota, or add to his available balances.  Where are these stored, and can I change them without breaking things?
